100% Merlot.
Merlot comprises the greater part of the grape varieties used to produce St Emilion and Pomerol. Without it, it is doubtful whether these two communes would enjoy their current reputation. Wines from this grape are generous, supple and round with an attractive softness even when very young. Since the Languedoc is blessed with both the Mediterranean and Atlantic influences, the Merlot can express itself to the full.

Origin

Selected plots in the Aude department lying principally on limestone/clay with good water retention. Pruning is severe so as to limit yields to 60hl/ha.

Description

VINIFICATION

Mechanical harvest followed by a gentle crush; vatting for 15 days followed by malolactic; gentle filtration to retain primary aromas.

CONSERVATION

Can be cellared for 3-5 years but enjoyable on release; serve between 15 & 16° C.

COLOUR

Intense, deep ruby colour.

BOUQUET

Spicy, blackberry/mulberry/bramble bouquet.

PALATE

Full-bodied, supple and harmonious palate allied to ripe tannins.

FOOD PAIRING

Accompanies white meats, poultry and roasts.
